Anacortes Apple Cake

Do you juice? If so, do you ever wonder what to do with your left over mush and chunks? Then this cake recipe is just what you’ve been looking for! Even if you don’t juice, you can use chopped apple. It also happens to be vegan! We hope you enjoy!

Ingredients

2 c Anacortes diced apples (or juice remnants)
1 Tbsp TruRoots organic Chia seeds
1/4 cup Dr. Bronner’s coconut oil
3 Tbsp water
1/4 tsp Morton & Basset 100% organic ground cinnamon
1/2 tsp Bob’s Red Mill Baking Soda
3/4 c Wholesome organic sugar
1 c Fairhaven Mill organic whole wheat all-purpose flour

 

Use a 9×9 baking pan (no need to grease it), and preheat oven to 350 degrees.
In a bowl, combine apples, chia seeds, coconut oil, and water and mix until well
incorporated. Next add the cinnamon and baking soda, being sure to continue
mixing well. Add the sugar, and then the flour, and stir until thoroughly mixed.
Pour into pan, and bake for 50 minutes or until edges start to brown.
